Didimo Ñañez is a 45 years old coffee grower, who was borned in Pasto, Nariño, but later took over his parents farm in Buesaco, Nariño. Didimo used to work as a butcher for 15 years in Pasto, but since he started working with coffee he realized his passion was working in the fields. Didimo attended SENA (coffee school) in order to improve his practices at his farm and achieve microlot quality. These days Didimo sell 80% of his production as microlot quality.

Washed

Description Process

First, the farmers need to clean the coffee cherries, fermented for 24 hours after pulped. Once the washed process has done , the wet parchment is placed on raised beds under shadow for 20-25 days until 11% moisture content is achieved.
