Finca Monteblanco, located at La Toroca in the San Adolfo, Huila is Manage by Rodrigo Sanchez tradition he leaned from his grandfather and now pass on to his daughter Natalia together with his wife Claudia Samboni. 

Monteblanco is settled on the top of a mountain and most of the time surrounded by clouds, there is where the name of the farm comes from.  

 

Rodrigo has been farming coffee for almost 15 years and working with new varieties like purple caturra, a type of caturra which cherries ripe color is a deep purple. Pink bourbon they think it was planted by Rodrigo's grandfather during the 80's the cherries ripen to a rosy pink - orange color. 

 

Pink Bourbon variety has a Brix degree measurement of 26 to 30 when it's at its best, after harvest floats are made to remove cherries that have a filling problem, pulped and immediately put in Grain-pro bags and taken to a room where the temperature is 10 to 13 degrees for 76 hours. After the fermentation process, it is washed and goes to the drying process, directly in the sun for three days and then passed to the African beds to Continue drying for 23 to 25 days.

At Monteblanco, brix degrees are important to determinate the most appropriate process. 20 - 23 degrees are selected for natural processing for Purple Caturra, the moisture content of the cherries is monitored and cherries are turned to avoid the formation of any mold. 

It is farmers like Rodrigo who greatly excite us, as they are pushing our world of specialty coffee to new limits, identifying specific varieties, and experimenting with the use of current technologies to define the processing techniques these coffees deserve. This vector on the production side will undeniably call for a deepening response from roasters with the same ambition.
