This coffee is produced by indigenous smallholder from Inza municipality, Cauca Department. Coffe from Inza is considered one of the most exotic profiles in Colombia. Since 2014 smallholders from Inza have managed to sell all their coffee as either regional or micro-lot quality. Inza is known for its low temperatures during the night (up to 9 degrees) and humid conditions. On average growers take 20 days to dry their washed coffees on raised beds

Description Process

This coffee is sundried, fermented for 24 hours under water and washed. Later dried on raised bed for 20 days until ideal moisture content is achieved.
